  • 3 tablespoons butter
  • 4 Washington® apple gala, peeled and cut into wedges
  • 1 1/2 cups raw sugar
  • 1 teaspoon cinnamon, ground, in slices
  • 1/8 teaspoons ground cloves
  • 1/8 teaspoons nutmeg, ground
  • 1 teaspoon vanilla essence
  • 1/4 cups lime juice
  • 3 tablespoons cornstarch, rehydrated
  • 1 cup almonds, chopped and toasted
  • 1 cup cranberries

  • Heat a skillet over high temperature and add the butter, Washington Gala Apples®, sugar, cinnamon, clove, nutmeg, and caramelize for 5 minutes; add the vanilla and lemon juice, and cook for 2 more minutes until it releases more juice. Add the cornstarch and let it cook for a few more minutes; finally, add the almonds and blueberries. Remove and cool.
  • Roll out the puff pastry and fill it with the apples, seal it, and brush with egg wash. Bake for 40 minutes at 180°C. Decorate with powdered sugar.
