Pumpkin in Tacha and Tejocote

Enjoy the best season of the year by preparing this sweet pumpkin in tacha and tejocotes. It is worth mentioning that it is known as pumpkin in tacha because there used to be pots called “tachos,” large copper cauldrons where piloncillo was also prepared.

  • 2 kilos pumpkin, cut into triangles
  • 1 cup piloncillo
  • 1 teaspoon nutmeg
  • 1 kilo tejocote
  • 1 cinnamon stick
  • 2 star anise pods
  • 1.5 liters water
  • 1.5 cups mandarin orange juice
  • 1 kilo guava, cut in half

  • Place the piloncillo, mandarin juice, star anise, cinnamon, and nutmeg in a saucepan with water. Cook the pumpkin cut into triangles for 20 minutes.
  • Remove the skin from the tejocote and the center of the fruit using a peeler or knife.
  • After 20 minutes, add the tejocote and cook for 10 more minutes over medium-low heat, so that syrup is made with the same fruits and the piloncillo.
  • Cut the guava in half, add it to the preparation, and cook for 8 to 10 more minutes.
  • Let the liquid reduce and serve once all the fruits are soft.
