Red Fruit Carlota

  • 1 cup Raspberries Berries Paradise®, for the filling of the carlota
  • 1 cup whole milk
  • 5 envelopes unflavored gelatin powder, hydrated, 35 g
  • 1 cup whipping cream
  • 1/2 cups sugar
  • 1 cup mascarpone cheese
  • ladyfingers

  • Blend the Berries Paradise® raspberries for 3 minutes or until you obtain a very fine puree. Cook in a pot over medium heat for 5 minutes. Set aside.
  • Heat the milk in a pot over medium heat, then pour in the gelatin and mix until dissolved. Set aside.
  • Whip the heavy cream in a bowl with a hand mixer for 5 minutes or until it doubles in size, then gradually add the sugar and set aside.
  • In another bowl, mix the mascarpone cheese with the Berries Paradise® raspberry puree and the milk with gelatin. Gradually add the whipped cream and fold it in with a spatula to avoid deflating it.
  • Cover the sides of a ring mold with ladyfingers. For the sides of the carlota, place the ladyfingers horizontally, as this will be the outline of your carlota. Pour the raspberry and mascarpone mixture that you prepared earlier and fill almost to the edge of the ladyfingers, which serve as the outline in the mold. Refrigerate the red fruit carlota for 4 hours to ensure it is completely firm.
  • Place the carlota on a flat plate and decorate with Berries Paradise® raspberries, Berries Paradise® blueberries, and Berries Paradise® blackberries. You can also use a ribbon to surround the ladyfingers and tie it with a bow.
