Red Fruit Cheesecake

  • 1 cup Great Value® wheat crackers
  • 1/2 cups butter
  • 2 tablespoons Great Value® granulated sugar
  • 1 cup strawberries
  • 1 cup raspberries
  • 1 cup Great Value® granulated sugar
  • 1 tablespoon cardamom
  • 1 star anise pod
  • 2 packages cream cheese
  • 1 1/4 cups condensed milk
  • 1/4 cups lime juice
  • 1 teaspoon vanilla essence
  • 21 grams unflavored gelatin powder, hydrated

  • Crush the cookies until they become powder. Add the butter, add the sugar and mix until incorporated.
  • For the jam, place the raspberries and strawberries in a saucepan over low heat, add the sugar, cardamom, and anise. Let it cook until it thickens into a jam. Let it cool and set aside.
  • For the filling, beat the cream cheese, add the condensed milk, lemon juice, vanilla extract, and slowly pour in the gelatin in a thin stream until fully integrated.
  • In a vintage jar, place a bit of the cookie base, add the previous mixture until the jar is filled to 3/4, refrigerate for 30 minutes.
