Rice Pudding a la Castellana

  • 1 1/2 liters cow's milk
  • 1 stick cinnamon
  • 1 lime
  • 1 orange
  • 1 tablespoon cinnamon powder
  • 2 glasses water
  • 8 tablespoons sugar

  • Soak the rice in a large pot for 5 - 10 minutes.
  • After the time has passed, add the milk, the cinnamon stick, the lemon and orange peels, as well as the sugar to the same pot, placing it over low heat and letting it simmer slowly, stirring occasionally.
  • Let it cook for 20 to 25 minutes, stirring continuously and leaving the pot uncovered.
  • Finally, pour it into a serving dish and sprinkle with ground cinnamon.
