250 grams semisweet chocolate
100 grams unsalted butter
3 egg yolks
6 egg whites
60 grams sugar
200 milliliters whipped cream

Melt the chocolate with the butter in a double boiler.
Let the chocolate cool slightly but keep it liquid and add the egg yolks.
In a separate bowl, beat the egg whites with the sugar until stiff peaks form and fold into the chocolate with a spatula.
Whip until the cream is firm and incorporate it into the chocolate.
