Skillet Apple Upside-Down Cake

  • 4 cups flour for traditional hot cakes Tres Estrellas®, 500 g
  • 1/2 cups sugar, 60 g
  • 1/4 cups butter, melted, 60 ml
  • 4 eggs
  • 1 teaspoon vanilla essence, 7 ml
  • 2 1/2 cups milk, 725 ml
  • 1/2 cups granulated sugar, 60 g, for the caramel
  • 4 apples, Granny Smith, peeled, cut into thick wedges
  • 1/4 cups butter, cut into small cubes
  • peppermint, for decoration

  • For the batter, in a large bowl, combine the Traditional Three Stars® Pancake Flour with the sugar, melted butter, egg, and vanilla extract. Beat with a hand mixer and gradually pour in the whole milk, mixing until everything is perfectly combined. Set aside.
  • In a clean and completely dry skillet, where you will make the cake, place the sugar and spread it over the entire surface. Heat it over low heat until it forms a lightly golden caramel, for about 10 minutes. Remove from heat and let the caramel cool slightly.
  • Place the apple wedges over the warm caramel, close together, simulating the petals of a flower. It is important to note that the caramel should be warm when placing the apples, so that when it cools completely, the apple will stick to the bottom of the skillet. If you notice that the caramel is no longer warm, reheat the skillet for a few minutes. Once you finish placing the apples, let it cool and set aside until use.
  • To finish the cake, once the apples with the caramel are cool, place the butter cubes on top and distribute them across the bottom. Then pour the batter mixture until it fills ¾ of the skillet.
  • Place it over low heat and cover. Cook the cake for 1 hour. You can place a larger skillet or griddle on top to avoid direct heat during cooking. It is very important to check the temperature and use a thick skillet that distributes heat well.
  • Remove the cake from the heat and let it cool. Invert the cake to remove it from the skillet and decorate with mint leaves.
