  • 1 kilo sweet potato
  • 2 liters water
  • 2 piloncillos
  • 4 sticks cinnamon
  • 1 cup Mezcal, or tequila
  • 1/2 cups sugar

  • Turn on the stove and heat over medium fire, approximately 150°C.
  • Wrap the sweet potato in aluminum foil and heat for 20 minutes.
  • Cool down and place the sweet potato cut into large cubes in a container. Add water, mezcal, cinnamon, piloncillo, and cook until half of the water is consumed.
  • Serve on plates and accompany with vanilla ice cream and agave honey.
