Spiced Gingerbread Cookies

  • 2 1/4 cups flour
  • 1 tablespoon ginger powder
  • 2 teaspoons cinnamon powder
  • 1/4 teaspoons ground cloves
  • 1/4 teaspoons nutmeg
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1 cup butter, at room temperature
  • 3/4 cups raw sugar, (165 g)
  • 1 egg yolk
  • 1 1/2 teaspoons vanilla essence
  • 1 tablespoon maple syrup
  • 2 tablespoons cow's milk, for the glaze
  • 5 tablespoons water, for the glaze
  • 3 cups icing sugar, for the glaze
  • 1 1/2 tablespoons meringue powder, for the glaze

  • Preheat the oven to 170°C.
  • In a bowl, mix all the dry ingredients very well and set aside.
  • Cream the butter with the sugar in the mixer for about 3 minutes.
  • Add the egg yolk, vanilla, honey, and milk and beat until incorporated. Lower the speed and gradually add the dry ingredients while continuing to mix. Incorporate well until a dough is formed.
  • Wrap the dough in plastic wrap and refrigerate for 15 minutes.
  • Roll out the dough with a rolling pin on a floured surface. Cut out gingerbread man shapes, Christmas trees, and stars. Place on a baking sheet.
  • Bake for 15 minutes or until the cookies are golden brown at the edges. Cool.
  • For the glaze, mix in a bowl the powdered sugar with the meringue powder and water.
  • Decorate the cookies with the glaze and let dry.
