Spiced Guava Sorbet

  • 4 cups water
  • 1 cup monk fruit, (monk fruit)
  • 1 stick cinnamon
  • 1 star anise pod
  • 2 cloves
  • 1/2 teaspoons nutmeg
  • 1/2 teaspoons ginger
  • 2 envelopes unflavored gelatin powder, 7 g each, hydrated and melted
  • 4 cups guava, frozen

  • Heat a small pot over medium heat with the water, add the monk fruit, cinnamon, star anise, clove, nutmeg, ginger, and cook for 15 minutes or until a syrup forms. Add the gelatin and dissolve. Remove from heat and cool slightly.
  • Blend the previous mixture with the frozen guavas until you have a homogeneous mixture.
  • Place the mixture in the frozen mixer bowl and beat on low speed for 20 minutes. Remove from the mixer and freeze for 20 minutes. Beat again for another 20 minutes and repeat the process until the mixture begins to solidify.
  • Place in a container and freeze for 1 hour.
  • Serve and enjoy.
