Spiced Pear Tart

  • 6 cups pear, peeled and thinly sliced
  • 1/2 cups brown sugar
  • 3 tablespoons tapioca
  • 1/2 teaspoons ginger, powder
  • 1/4 teaspoons cinnamon powder
  • 1 tablespoon yellow lemon juice
  • 500 grams pie crust
  • 1 tablespoon unsalted butter

  • Preheat the oven to 190°C.
  • In a large bowl, lightly mix the pears with the sugar, tapioca, ginger, cinnamon, and lemon juice. Let it rest for 15 minutes.
  • Place the tart base in the previously floured mold. Fill with the fruit mixture and add a few dollops of butter. Cover with more tart dough; seal and roll the edges. Make several small cuts on the surface to allow steam to escape.
  • Bake for 45 to 50 minutes or until the fruit juice forms bubbles that gently break. Let it cool before serving.
