  • 1/2 cups raisins
  • 1/2 cups cranberries, dehydrated
  • 1/2 cups dried fruit, mixed, cut into small cubes
  • 1/2 cups maraschino cherry
  • 2 tablespoons orange zest
  • 1 teaspoon clove, ground
  • 1 teaspoon nutmeg
  • 1 teaspoon ginger powder
  • 1 teaspoon cinnamon powder
  • 1/4 cups rum
  • 1/4 cups pecans, finely chopped
  • 2 cups cow's milk
  • 6 eggs
  • 1/4 cups sugar
  • 1/4 cups butter, melted
  • 1 tablespoon vanilla essence
  • 6 cups bread, stale, cut into cubes

  • Preheat the oven to 180° C
  • Heat a skillet over medium heat, and cook the sugar until it forms caramel, add a bit of butter and mix until incorporated. Pour into a 25 cm diameter bundt pan. Set aside.
  • In a bowl, mix the raisins, cranberries, mixed fruit, cherries, orange zest, cloves, ginger, cinnamon, rum, and macerate for 30 minutes.
  • In a bowl, beat the milk with the egg, sugar, butter, and vanilla essence. Soak the bread with this mixture and add the fruits you macerated.
  • Place macerated cherries on the hardened caramel, add some fruit, nutmeg, and pour the bread mixture, cover with aluminum foil, and bake in a water bath for 55 minutes. Remove from the oven, cool, and unmold.
