Strawberry Ice Cream Sandwich

You won't need to buy your ice cream sandwich anymore; now you can make them at home with this amazing and easy recipe, featuring a smooth and delicious strawberry ice cream filling between two soft dark chocolate cookies. Perfect for dessert.

  • 1/2 cups butter, melted
  • 1/2 cups sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1/2 cups flour
  • 1/2 cups cocoa
  • 1/2 teaspoons salt
  • 1 Strawberry Halo Top®

  • Preheat the oven to 180°C.
  • In a mixer, add the butter with the sugar, add the egg, the vanilla essence, and using a sifter, add the flour, cocoa, and salt.
  • Wrap in cling film and refrigerate for 30 minutes.
  • Roll out the dough on a floured surface and use a knife to cut rectangles of 10 cm x 5 cm, then use a wooden stick to mark the rectangles to make the holes for the cookies.
  • Place on a baking tray and bake for 15 minutes. Let cool and set aside.
  • Place two scoops of Strawberry Halo Top® ice cream on a cookie base, close with another cookie base to form a sandwich. Repeat with all the cookies and freeze until serving.
