  • 1 cup strawberry
  • 1/4 cups apple juice, natural with no added sugar
  • 2 cups ricotta cheese, reduced fat
  • 2 teaspoons lime zest
  • 1/4 cups maple syrup
  • 1 teaspoon vanilla essence
  • 1 teaspoon cinnamon
  • 1 cup strawberry , slices for garnish
  • 4 leaves peppermint, for garnish
  • 4 edible flowers, Nasturtium or Pansy

  • For the sauce using a blender, puree the strawberries and apple juice until smooth.
  • Divide the puree into 4 equal parts using cocktail glasses.
  • In a food processor or blender, combine the ricotta cheese, lemon zest, maple syrup, vanilla extract, and cinnamon. Process until smooth, about 30 seconds.
  • Equally separate the ricotta mixture into the 4 glasses. Place the sliced strawberries on top of the mixture.
  • Refrigerate until ready to serve.
