Stuffed Marzipans

  • 2 1/2 cups peanuts, toasted
  • 1 1/2 cups icing sugar
  • 80 milliliters San Juan® egg whites
  • 1/2 cups dulce de leche

  • Grind the peanuts with the help of a processor for 5 to 10 minutes, until you have peanut flour; it needs to be very fine so that your marzipan does not separate.
  • Add the powdered sugar to the processor and grind for another 5 minutes; when it starts to form a dough, add the San Juan® Egg Whites and mix for 2 minutes, remove from the processor and set aside.
  • Add 2 tablespoons of the marzipan mixture to a round mold 4 cm thick and with the help of your fingers or a glass jar, press the marzipan to compress it and make it very compact.
  • With your fingers, form a hole in the middle of the marzipan, then add a teaspoon of dulce de leche and then add two more tablespoons of the marzipan mixture, compress it again, making sure the filling doesn’t spill out. Form several marzipans in the same way. Let them rest for at least 24 hours.
  • Place colored paper in a basket and place the marzipans on top.
