This cookie recipe is very easy to prepare and a good activity to do with your children. You can make them in the shapes you want ... stars, hearts for Valentine's Day, Christmas trees, letters, etc.

2 1/2 cups flour
3/4 teaspoons salt
1 1/2 sticks butter
1 egg
1 teaspoon vanilla essence
icing sugar
Preparation

Mix salt and flour in a bowl.
Beat the butter and sugar with an electric
mixer
until it is fluffy.
Add the egg and the vanilla extract.
Reduce the speed of the
blender
and add the flour mixture until it is incorporated.
Form two balls of dough and flatten them into 2 discs of 15 cms each.
Wrap in egapack and chill until firm, for 1 hour.
Preheat the oven to 180 degrees.
On a floured surface, put one of the discs of the dough that is stored in the refrigerator.
Flatten the dough to a thickness of 6mm.
Cut the cookies you want with the figures mold.
Repeat with the other cookie dough disc.
Place the cookies on a greased tray.
Cook the cookies (first a tray), until golden brown, about 10-12 minutes. Cool down to a rack when ready.
Bake the other cookie sheet, following the previous step.
Decorate the cookies with icing sugar and enjoy.
