In a stand mixer, combine the softened butter, lemon zest, sugar, and salt. Beat until fluffy. Add the egg and mix well.
Add the flour gradually. Beat well to ensure everything is incorporated.
Place the dough on parchment paper and wrap it. Put it in the refrigerator for at least 30 minutes.
Preheat the oven to 350 degrees (180 degrees Celsius). Line 2 baking sheets with parchment paper.
Take the cookie dough and divide it in half. Roll out on a clean surface with a little flour. Knead until you have a dough that is 0.6 cm thick.
Dust the cookie cutter with flour and cut out the desired cookies. Arrange the cut cookies on baking sheets lined with parchment paper.
Bake the cookies for 15-20 minutes until lightly browned.
Let cool on a wire rack before decorating.
They can be decorated with a sugar icing. To prepare it, take 6 tablespoons of milk and mix with 1/2 kilogram of powdered sugar. Divide into different parts and add drops of food coloring until you achieve the desired colors. Decorate the cookies with a piping bag or a brush.
