Sugar-Free Rice Pudding

  • 1 cup rice
  • 2 cups light milk
  • 2 cups evaporated milk, light
  • 1 stick cinnamon
  • 2 tablespoons vanilla essence
  • 5 grams cinnamon powder, for decoration
  • 4 tablespoons artificial sweetener

  • Wash the rice with water until the water runs clear; the idea is to remove the starch.
  • Put the light milk and evaporated milk in a pot along with the vanilla and cinnamon stick over low heat.
  • Add the rice and stir with a paddle or wooden spoon to prevent sticking.
  • Stir regularly and monitor until the rice is cooked.
  • Let cool.
  • When serving, add the sweetener if desired; it is not bland, so it is not necessary.
  • Sprinkle a little ground cinnamon for decoration to taste.
