Guava Crepes

If you're looking for a sweet and light dish, this recipe for whole wheat crepes filled with a mixture of yogurt and guava will be a good option.   • 1 teaspoon ginger, in powder, for the filling
  • 2 tablespoons lime juice, for the filling
  • 1/4 cups peppermint, finely chopped for the filling
  • 2 packages guava cups Vita + ®, 170 g each
  • 1 cup whole-wheat flour, for the crepe batter
  • 2 cups guava cups Vita + ®, 170 g each (use only the juice)
  • 2 egg whites, for the crepe batter
  • 2 tablespoons sugar, for the crepe batter
  • 2 tablespoons vegetable oil, for the crepe batter
  • cooking spray, for cooking the crepes
  • whipped cream, for serving
  • guava, (pieces of Vita+® guava Cups) for serving
  • peppermint, (leaves) for serving

  • For the filling, in a bowl mix the yogurt, ginger, lemon juice, mint, and packs of Vita+® guava Cups until fully combined. Set aside.
  • For the crepe batter, in a bowl mix the whole wheat flour, the juice of Vita+® guava Cups, egg whites, sugar, and vegetable oil until fully combined. Heat a non-stick skillet, grease with cooking spray, and pour the batter using a ladle; spread it in circular motions and cook for 3 minutes over low heat. Repeat until you finish the mixture. Set aside.
  • On a board, fill the crepes with the guava mixture. Serve on a flat plate, accompanied by pieces of Vita+® guava Cups, whipped cream, and mint leaves.
