  • 1 cup butter, for the dough
  • 3/4 cups sugar, for the dough
  • 2 cups masa mix for tamales, for the dough
  • 1 teaspoon baking powder, for the dough
  • 1 cup water, for the dough
  • food coloring, pink
  • 2 cups cream cheese
  • 1 cup blackberry jam
  • 1 cup canned pineapple, cut into cubes
  • blackberries, for decoration

  • Beat the butter with the sugar until soft, gradually add the flour, baking powder, and then slowly add the water and color with pink dye. Beat until you have a homogeneous dough.
  • Soften the cream cheese with a spatula, place it in a pastry bag and set aside.
  • Pour half of the tamal dough into a previously greased and floured ring mold, spreading it well. Using a spoon, create a well in the middle and add the cream cheese, blackberry jam, pineapple, and cover with the remaining dough.
  • Cover the mold with aluminum foil and cook in a water bath on the stove for about 1 hour or until cooked through. Cool slightly and unmold.
  • Unmold the tamal and decorate with cream cheese and blackberries, cut a slice and enjoy.
