Sweet Tamal with Rice Flour

  • 1 1/4 cups butter, 300 g, cubed and at room temperature
  • 1 tablespoon vanilla essence
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 2 cups rice flour, 400 g, sifted
  • 1/2 cups wheat flour, 100 g, sifted
  • 5 eggs
  • corn husks, soaked in hot water and drained
  • 1/2 cups raisins

  • Beat the butter, vanilla essence, and sugar with a mixer using a whisk attachment at medium speed until creamy; you will notice that the butter begins to have a slightly lighter color and a fluffy consistency.
  • Lower the speed and add the baking powder, gradually add the rice flour and wheat flour; beat at low speed to incorporate slowly. Then pour in the eggs one by one, without stopping beating, and finish incorporating the mixture. You should obtain a uniform and fluffy consistency. Set aside.
  • Take a totomoxtle corn leaf and fill it with the mixture, spreading it with the help of a spoon to form a bowl and add raisins to taste. Wrap the tamal leaf, close it with a strip of corn leaf, and tie only the thinnest tip. Repeat until the mixture is finished.
  • Cook the tamales in a steamer or tamal pot, using corn leaves to cover the tamales well and prevent steam from escaping, then close and cook over medium-low heat for at least 35 minutes. Remember to check the pot so that all the water does not evaporate.
  • Serve hot and accompany with atole or hot coffee.
