Sweet Rice Flour Tamales

  • 1 1/4 cups butter, 10.5 oz, cut into cubes, at room temperature
  • 1 tablespoon vanilla essence
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 2 cups rice flour, 14.1 oz, sifted
  • 1/2 cups wheat flour, 3.5 oz, sifted
  • 5 eggs
  • corn husks, rehydrated in hot water and drained
  • 1/2 cups raisins

  • In a mixer with the balloon whisk attachment, cream butter, vanilla essence, and sugar on slow speed. The butter will turn fluffy and slightly whiter.
  • Lower speed and add baking powder, rice flour, and wheat flour little by little. Mix on low speed to incorporate slowly. Add eggs one by one while mixing. Mix until a homogenous and fluffy consistency is obtained. Set aside.
  • Spread tamal dough on each corn husk and spread it with a spoon making a basin. Fill with raisins. Wrap corn husk and close with a corn husk strip tying the thinnest end. Repeat with the remaining tamal dough.
  • Arrange tamales in a steamer or a tamalera. Cover tamales with corn husks to keep them from losing steam. Cover steamer and cook over medium-low heat for at least 35 minutes. Make sure not all the water evaporates.
  • Serve sweet rice flour tamales hot and pair with atole or hot coffee.
