Tabasco Banana Cake

  • 90 grams unsalted butter , at room temperature
  • 1 cup sugar
  • 3 eggs
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons salt
  • 225 milliliters evaporated milk
  • 3 bananas, ripe, mashed
  • 2 teaspoons liquid vanilla

  • Preheat the oven to 200°C.
  • Grease and flour a cake pan.
  • Soften the butter by mixing in the sugar; once done, add the eggs and beat.
  • In another bowl, add the dry ingredients and mix, gradually pour this along with the evaporated milk into the butter and sugar mixture.
  • Incorporate the mashed banana and vanilla.
  • Pour the mixture into the pan and bake for 45 minutes.
  • Remember to do the toothpick test to see if the cake is ready; if it comes out wet, return the cake to the oven for another 5 minutes.
