Cajeta Gorditas

These cajeta gorditas are made with dough that has a touch of cream, then cooked on a griddle or frying pan. You can enjoy them plain or fill them with your favorite ingredients, but we recommend adding a touch of the best cajeta!

  • 3 cups flour, all-purpose
  • 2 tablespoons baking powder
  • 1 cup sugar
  • 1 pinch salt
  • 2 eggs
  • 1 1/2 cups clotted cream
  • flour, all-purpose, for rolling out
  • Coronado® burned

  • Pour the flour into a bowl, then add the baking powder, sugar, and salt. Mix well.
  • Add the eggs one by one, mix, pour the cream gradually, and integrate again. Transfer the mixture to a floured flat surface and knead for 15 minutes or until a smooth and homogeneous dough is obtained. Return the dough to a bowl, cover with plastic wrap, and let it rest in the refrigerator for 20 minutes.
  • Sprinkle flour on a flat surface, roll out the dough with a rolling pin, and cut circles with a 6.5 cm diameter cutter. Repeat until all the dough is used.
  • Cook the cajeta gorditas on a griddle over low heat for 5 minutes on each side. Cool the gorditas and open them in half.
  • Fill the gorditas with Coronado® caramel and enjoy.
