2 cups guava paste, cut into quarters and cooked, for the sauce

Add the guava paste, water, and cinnamon stick in a pot over high heat, then cover and heat until it boils.
Let the guava paste cool slightly, remove the cinnamon stick, and using a blender, puree until the guava breaks down and has a sauce-like consistency. Set aside.
Heat the oil in a deep skillet over medium-high temperature. Use a fork to poke the flour tortilla (to help it take on the fritter shape) and fry on both sides until it turns a light brown color. Drain and remove excess grease with a paper towel.
In a bowl, mix the sugar with the cinnamon and sprinkle the fritters with the mixture.
Arrange the fritters on a plate, garnish with guava, and drizzle with the guava sauce.
