Guava Charlotte

Take advantage of the sweetness of the guavas you have left at home and prepare this delicious Guava Charlotte recipe, made with cookies and a cream with extra guava. For this no-bake dessert, you need to cook the guava sweet until, when passing a spoon through it, it is so thick that it doesn't mix with the cream.

  • 750 grams guava, for the guava sweet
  • 1 cup sugar, for the guava sweet
  • 1/2 cups water, for the guava sweet
  • 1 stick cinnamon, for the guava sweet
  • 3 packages cream cheese, for the charlotte (190g each)
  • 1 cup condensed milk, for the charlotte
  • 2 tablespoons lime juice, for the charlotte
  • María cookies, for the charlotte
  • 1 envelope unflavored gelatin powder, for the glaze (hydrated and melted) (7 g)
  • guava, sliced, for decoration
  • lime, in slices, for decoration
  • jam, or apricot glaze, for decoration

  • Blend the guavas with sugar and cinnamon. Strain.
  • In a pot over low heat, cook the guava sweet for 15 minutes, stirring constantly, until it thickens. Remove and cool. Divide the sweet into two parts.
  • Beat the cream cheese with the condensed milk, 1 ¼ cups of guava sweet, and lemon juice until you obtain a smooth mixture.
  • On a 20 cm diameter ring, arrange the cookies to form a base. Add some of the guava cream and cover with more cookies. Repeat the process until the ring is filled. Refrigerate for 2 hours or until firm.
  • For the glaze, use 1 ½ cups of guava sweet with hydrated gelatin. Pour the preparation into the ring and refrigerate again until firm.
  • Unmold the charlotte and decorate with guavas, lemons, and glaze with jam or shine. Serve.
