Rice with Milk and Red Fruits

  • 1 cup white rice, cooked
  • 1 pinch salt
  • 1 cup water
  • 1 liter lactose-free milk, light
  • 1 cup lactose-free milk, light
  • 1 sprig cinnamon
  • 2 star anise pods
  • 1 cup honey
  • 1 teaspoon pistachio essence
  • lime zest, to taste
  • 1 cup raisins
  • 1/2 cups strawberries, washed and disinfected
  • 1/2 cups blueberry
  • 1/2 cups raw sugar

  • In a deep non-stick pot, heat the water; when it is boiling, add the cinnamon, star anise, a pinch of salt, lemon zest, pistachio essence, and mix.
  • When the previous mixture is boiling, add the rice, let it come to a boil again, and add the liter of milk. Let it cook on low heat without covering, as the preparation can spill over. When it comes to a boil, let it cook for 15 minutes.
  • Gently stir the mixture every 5 minutes.
  • Then we will add the raisins, the cup of milk, and the cup of honey. Let it cook for 15 more minutes and remove from heat.
  • To serve, mix the brown sugar with the blackberries and strawberries.
  • In a glass, serve a portion of rice and garnish with the sugared fruits.
