Traditional Candied Nuts

This candy is very Mexican, and it's super easy to prepare. Besides being an excellent source of energy, the nuts add a lot of flavor; you can add them to salads or eat them alone. They are exquisite!

  • 1 cup sugar
  • 1/2 cups water
  • 1 teaspoon vanilla essence
  • 4 cups pecans

  • In a saucepan, cook the sugar with the water and vanilla. Cook for a few minutes until the sugar is completely dissolved.
  • Add the nuts and cook for about 30 minutes on low heat, stirring occasionally.
  • Once the caramel completely coats the nuts and all the liquid has evaporated, pour the nuts onto a greased baking sheet or silicone mat.
  • Separate with a fork and let dry. Serve.
