Traditional Candied Nuts

This candy is very Mexican, and it's super easy to prepare. Besides being an excellent source of energy, the nuts add a lot of flavor; you can add them to salads or eat them alone. They are exquisite!

1 cup sugar
1/2 cups water
1 teaspoon vanilla essence
4 cups pecans

In a saucepan, cook the sugar with the water and vanilla. Cook for a few minutes until the sugar is completely dissolved.
Add the nuts and cook for about 30 minutes on low heat, stirring occasionally.
Once the caramel completely coats the nuts and all the liquid has evaporated, pour the nuts onto a greased baking sheet or silicone mat.
Separate with a fork and let dry. Serve.
