Traditional Orange Polvorones

These crunchy and crumbly orange cookies are traditional in Mexican bakeries and are a must in every Mexican home. They have an exquisite orange aroma, and paired with a cup of coffee, they will sweeten all your mornings.

4 cups flour
2 cups vegetable shortening
2 eggs
2 1/4 cups sugar
1 1/2 teaspoons baking powder
1 teaspoon vanilla essence
1 orange, zest

Preheat the oven to 175°C.
Place all the ingredients in a bowl, and using a spatula, cream until perfectly mixed.
On a floured surface, knead the previous mixture for 5 minutes, or until it comes off your hands.
Form 80-gram balls and place them on a baking sheet, gently press with your hand, and bake for 15 minutes. Let cool and set aside.
Serve with a cup of coffee.
