For the dough: Mix the flour, baking powder, sugar, and salt in a bowl. Then add the vanilla extract, butter, water, and pieces of Huevo San Juan®. Mix until a dough forms. Cover with cling film and refrigerate for 20 minutes.
Divide your dough into two and sprinkle your surface with flour to roll out your dough; it should be very thin so that your gaznates turn out crispy. Cut your dough to the width of your molds, forming strips. Cover your molds with the dough strip and seal with a little water to stick, and set aside.
Heat enough oil in a pot over medium heat to fry the gaznates. Once the oil is hot, lower the flame and submerge the gaznates, basting them with oil while moving them constantly, fry for 5 minutes or until golden. Remove from the oil and drain on a board with absorbent paper. Let cool, unmold, and repeat until done.
For the meringue: Place the sugar along with the pulque in a pot, mix, and bring to medium-low heat until you obtain a transparent, thick syrup, reaching a temperature of 113 °C; just ensure that the consistency remains.
While your caramel is forming, beat the Huevo San Juan® egg whites with a whisk attachment on medium-high speed until they double in size. Then lower the mixer speed and, without stopping, add the transparent sugar syrup all at once, it should have a shiny and uniform tone. Continue beating at the same speed for 5 more minutes or until the meringue cools.
Divide your meringue into three bowls. One will remain white, add red food coloring to the second and mix until the desired color is achieved. Add green food coloring to the third and mix until the desired color is achieved. Place the three meringues in three different piping bags with a star nozzle.
Fill the gaznates with the different colors of meringue.
Serve on a board or flat plate and enjoy.
