Tropical Fruit Parfaits with Passion Fruit Sauce

  • 3 passion fruit
  • 190 grams cream cheese, at room temperature
  • 1 tablespoon sugar
  • 1 can canned pineapple, in pieces
  • 3 cups mango, cut into small cubes
  • 3 cups papaya, cut into small cubes
  • 1 1/2 cups whipped cream
  • 1 1/2 cups pomegranate

  • Cut the tips off the ends of the passion fruits. Use a spoon to scoop out the pulp. Place it in a metal mesh strainer over the blender. Press down on the pulp with the back of the spoon to extract the juice and let it fall into the blender. Add the cream cheese with the sugar to the blender; put the lid on. Blend well; set aside.
  • In 12 dessert or parfait glasses, place 1/4 cup of pineapple pieces in each. Cover them with a layer of 1 tbsp. of the cream cheese mixture, another with 1/4 cup of mango cubes, one more with another tbsp. of the cream cheese mixture, and the last with 1/4 cup of papaya cubes. Top each parfait with 2 tbsp. of topping and 2 tbsp. of pomegranate.
  • Serve these parfaits immediately. Or if not, refrigerate them until serving time.
