Vanilla Tarte Tatin

The vanilla tarte tatin is a classic French dessert made with apples. Although it seems very complicated, following this recipe anyone can prepare it at home.

  • 500 grams puff pastry

  • Preheat the oven to 190 degrees (375 F).
  • Put a little flour on a flat surface and roll out the puff pastry. With a rolling pin, flatten the pastry until it is large enough to cover the entire pan. (You can trim the corners a bit so that there isn't too much excess pastry).
  • Peel the apples. Cut them in half horizontally and remove the seeds with a spoon to make fruit balls.
  • Put the sugar, Calvados, vanilla seeds, and the vanilla pod in the pan over medium heat. Without stirring, let the sugar dissolve and cook until a light caramel forms.
  • Once the caramel has a brown color, add the apples. Stir everything carefully in the pan for 5 minutes until the apples start to soften. Add the cubed butter and place the puff pastry on top. Carefully tuck the edges of the pastry so they don't spill over the pan. (It is recommended to use a wooden spoon to avoid burns).
  • Put the pan in the oven and cook for 25-30 minutes or until the pastry is golden. Remove from the oven and flip the tart onto a plate. (Tip: if there's too much liquid, you can drain it before flipping).
  • Let it cool for a few minutes and serve with ice cream of your choice.
