Vegan Matcha Volcano

A healthy vegan cake is possible with this baking recipe. With a filling of white chocolate and matcha, this volcano is fluffy on the outside and soft and melted on the inside. Remember not to overbake it, so the filling stays liquid, and don't forget to serve it with fruits like green apple and kiwi.

  • 1/2 cups white chocolate, melted, for the ganache
  • 2 tablespoons matcha, powdered, for the ganache
  • 1/4 cups whipping cream, plant-based, melted for the ganache.

  • 3 tablespoons sugar
  • 1/4 teaspoons baking powder
  • 1/2 teaspoons salt
  • 3 tablespoons matcha, powdered, sifted
  • 1 tablespoon vegetable oil
  • 1 teaspoon vanilla essence
  • 1/4 cups almond milk
  • 1 tablespoon butter, to grease the mold
  • 1 teaspoon matcha, powdered, to coat the mold
  • white chocolate, grated for decoration
  • matcha, to sprinkle
  • green apple, for decoration
  • kiwi, for decoration

  • Preheat the oven to 190 °C.
  • In a bowl, mix the white chocolate with the matcha and plant-based whipping cream, beat until combined, and freeze.
  • In a bowl, mix the flour, sugar, baking powder, salt, matcha, oil, vanilla extract, and almond milk until all ingredients are combined.
  • Grease your molds with butter and coat with matcha, then form balls of 10 grams. Add the mixture halfway, place the ganache ball, and cover with the remaining mixture, bake for 18 minutes and unmold.
  • Sprinkle with matcha, white chocolate, apple, and kiwi.
