Walnut Cheesecake with Chocolate and Caramel

  • 90 grams butter, cold, cut into small cubes
  • 1/2 cups raw sugar
  • 1/2 cups walnuts, toasted and chopped
  • 1 cup flour
  • 3 tablespoons Hershey’S ® cocoa
  • 1 cup whipping cream, cold
  • 1/2 cups mascarpone cheese
  • 380 grams cream cheese
  • 1/2 cups ricotta cheese
  • 1 cup granulated sugar
  • 2 envelopes unflavored gelatin powder, rehydrated and melted
  • 1/4 cups Hershey's® Cookies n'Creme® white chocolate chips
  • 1 cup Hershey’S® chocolate syrup
  • 1 cup walnuts, toasted, for decoration
  • 1/4 cups caramel, for decoration

  • Preheat the oven to 200° C.
  • For the base, beat the butter with the sugar until fluffy. Add the walnuts, flour, and Hershey’s® cocoa all at once, and beat until incorporated.
  • Pour the mixture into a cake mold and spread it with the help of a spoon. Bake for 20 minutes and cool.
  • For the filling, beat the heavy cream, mascarpone cheese, cream cheese, ricotta cheese, and sugar in a mixer. Gradually add the gelatin in a steady stream and beat until combined. Mix in the Hershey's® Cookies 'n' Creme White Chocolate Chips.
  • Pour into the mold with the base and refrigerate for 2 hours or until set.
  • Remove the mold from the refrigerator and cover the cheesecake with Hershey’s® Chocolate Syrup. Arrange the walnuts on top.
  • Unmold and decorate with caramel.
