Add all the ingredients to a pot over high heat, except for the vanilla extract.
Cook for 1 minute, stirring continuously. Remove from heat after the time is up and let cool. You can place the pan in a bowl of ice water to speed up the cooling process.
Add the vanilla and beat until everything is well mixed, for about 10 minutes until the icing has risen slightly and the color is shiny.
