Walnut Surprise Cookies

These walnut cookies are delicious and crunchy. When you eat them, you are surprised by the flavor of the jam!

  • 325 grams unsalted butter , soft
  • 200 grams sugar
  • 1 tablespoon liquid vanilla
  • 2 egg yolks
  • 425 grams flour
  • 40 nuts, in halves
  • 1/4 cups apricot jam

  • Cream the butter, add the sugar and beat until creamy. Add the egg yolks, beating very well between each one. It should be fluffy, add vanilla.
  • Add flour at low speed until incorporated. Preheat the oven to 325ºF. We need 2 baking sheets. Make small balls with your hands using a teaspoon of dough and place them on the baking sheet, with 5 centimeters of space between each one. They should be about 2.5 cm in diameter.
  • With the end of a wooden spoon dipped in flour, make a dent in each ball. In this, we will put the jam and on top, pressing a bit, we place the half walnut, so that the jam is not visible.
  • Bake the sheets one at a time for 15 minutes. Until they look slightly golden. Place on a rack to cool and continue with the other sheets.
