Watermelon and Lettuce Popsicles

These watermelon and lettuce popsicles are super fresh and delicious, with a sweet watermelon flavor and a hint of lettuce that you surely didn't expect to taste so good. Prepare them for these hot days.

  • 2 cups watermelon , in cubes and seedless
  • 2 cups coconut water, Divided
  • 6 tablespoons sugar , Divided
  • 1 cup salad, mixed Eva ®

  • Blend the watermelon with 2/3 of the coconut water and 4 tablespoons of sugar.
  • Pour into popsicle molds, filling only ¾ full, and freeze for about 1.5 hours or until frozen. Halfway through the process, insert the popsicle sticks.
  • Blend the rest of the water and sugar along with the mixed salad Eva.
  • Fill the molds and freeze for one more hour or until the popsicles are completely frozen.
  • Unmold and serve.
