These watermelon and lettuce popsicles are super fresh and delicious, with a sweet watermelon flavor and a hint of lettuce that you surely didn't expect to taste so good. Prepare them for these hot days.
Blend the watermelon with 2/3 of the coconut water and 4 tablespoons of sugar.
Pour into popsicle molds, filling only ¾ full, and freeze for about 1.5 hours or until frozen. Halfway through the process, insert the popsicle sticks.
Blend the rest of the water and sugar along with the mixed salad Eva.
Fill the molds and freeze for one more hour or until the popsicles are completely frozen.
Unmold and serve.
