Wedding Cupcakes

These delicious vanilla cupcakes are topped with vanilla frosting and decorated with lace. They are perfect for a wedding or a shower.

  • 3 cups flour
  • 2 cups sugar
  • 1 tablespoon baking powder
  • 3/4 tablespoons salt
  • 2 sticks unsalted butter
  • 4 eggs
  • 1 cup whole milk
  • 1 tablespoon vanilla essence
  • 4 cups vanilla frosting, can be purchased

  • Preheat the oven to 180 degrees Celsius.
  • Prepare a baking dish for mini cupcakes with the liners (this recipe yields 48 mini cupcakes). Grease with cooking spray.
  • Mix the flour, sugar, baking powder, and salt. Add the butter and beat with an electric mixer.
  • Add the eggs, milk, and vanilla and beat for 2-3 minutes.
  • Pour the mixture into cupcake liners, filling only halfway (the cupcakes rise a lot). Bake until a toothpick inserted comes out clean, 15-20 minutes.
  • Remove from the oven and unmold, allowing them to cool.
  • Cut strips of white lace to cover around the cupcakes and attach with glue or silicone.
  • Mix the frosting with 4 drops of food coloring. In the photograph, blue food coloring was used. Decorate the cupcakes with a pastry bag.
