White Chocolate and Cheese Cake

White chocolate cake with a cookie base, with few ingredients and very simple and quick to make.

  • 225 grams cookies, crushed (I use digestive)
  • 100 grams unsalted butter , melted
  • 300 milliliters clotted cream, for whipping
  • 350 grams white chocolate chips, chopped
  • 250 grams mascarpone cheese
  • cocoa powder
  • blackberries, to taste

  • In a bowl, mix the finely crushed cookies with the melted butter until a paste forms. Place it at the bottom of the mold and refrigerate.
  • In a saucepan, boil the cream without stopping to stir, remove from heat and add the chopped chocolate, stirring until it completely melts, and let it cool.
  • When the chocolate and cream mixture is cool, add the mascarpone cheese, stirring gently, distribute the blackberries along the cookie base, and leave for a minimum of 2 hours in the refrigerator.
  • Sprinkle with cocoa powder.
