  • Start by making the dough. In a food processor, process the flour, sugar, and butter until a dough forms. Add the water and finish processing.
  • Remove the dough from the processor and knead it manually on a clean surface. Wrap it in plastic and refrigerate for 30 minutes.
  • Using a rolling pin, flatten the dough until it covers a circular tart dish. Grease the dish with cooking spray and carefully place the dough, using your fingers to mold it so it rises along the sides of the dish.
  • Preheat the oven to 180 degrees Celsius and bake the dough until golden (about 30 minutes). Remove from the oven and allow to cool.
  • While the base is cooling, prepare the filling by heating the whipping cream. As soon as it starts to boil, remove it from the heat.
  • Add the white chocolate to the cream and mix until it is completely melted.
  • Pour the filling over the tart and then arrange the fruits on top. Place in the freezer and allow to chill/freeze for at least 12 hours before serving.
  • Brush the strawberries with a bit of strawberry jam heated in the microwave to make them shiny.
