Start by making the dough. In a food processor, process the flour, sugar, and butter until a dough forms. Add the water and finish processing.
Remove the dough from the processor and knead it manually on a clean surface. Wrap it in plastic and refrigerate for 30 minutes.
Using a rolling pin, flatten the dough until it covers a circular tart dish. Grease the dish with cooking spray and carefully place the dough, using your fingers to mold it so it rises along the sides of the dish.
Preheat the oven to 180 degrees Celsius and bake the dough until golden (about 30 minutes). Remove from the oven and allow to cool.
While the base is cooling, prepare the filling by heating the whipping cream. As soon as it starts to boil, remove it from the heat.
Add the white chocolate to the cream and mix until it is completely melted.
Pour the filling over the tart and then arrange the fruits on top. Place in the freezer and allow to chill/freeze for at least 12 hours before serving.
Brush the strawberries with a bit of strawberry jam heated in the microwave to make them shiny.
