Yule Log Filled with Pastry Cream

  • 4 cups cow's milk
  • 8 egg yolks
  • 1 cup granulated sugar
  • 1 teaspoon vanilla essence
  • 4 tablespoons cornstarch
  • 6 eggs
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups flour
  • 1 teaspoon vanilla essence
  • 4 tablespoons cocoa
  • 1/4 cups butter, melted
  • 2 tablets bittersweet chocolate, 150 grams
  • 1/2 cups whipping cream
  • 9 cherries, for decoration
  • 10 peppermint, for decoration
  • icing sugar, for decoration

  • Preheat the oven to 180° C.
  • For the pastry cream, mix the cornstarch with the egg yolks, set aside.
  • In a low heat, combine the milk, sugar, and vanilla, gradually add the yolks while continuing to whisk, let cook and stir until thickened, refrigerate for 2 hours.
  • For the log and the arm, beat the eggs with the sugar until doubled in volume, about 5 minutes, add the vanilla essence, and gradually add the dry ingredients, incorporate the melted butter in a thin stream while continuing to whisk.
  • Spread on two trays lined with parchment paper or silicone mat and bake for 10 minutes, flip while still hot onto the parchment paper with sugar and place a damp cloth on top, cool completely.
  • Spread the pastry cream on both sheets and roll up, refrigerate for 20 minutes.
  • Cut the ends of one roll diagonally and set aside.
  • For the ganache, heat the cream and add the chocolate, set aside.
  • To assemble the roll, place the whole log vertically and place the other log to the side.
  • Pour the ganache over the log and cover completely, let it dry for about 10 minutes at room temperature and with the help of a fork, grate the log.
  • Decorate with cherries, mint leaves, and powdered sugar.
  • Let cool and enjoy with a glass of cold milk.
