Atole with Amaranth Joy

If you enjoy traditional Mexican sweets, you should try this atole with the ingredients of amaranth joy and the special touch of Tres Estrellas® Rice Flour, which provides a large amount of vitamins, minerals and fiber. Enjoy it in cold season!

  • 3 cups whole milk
  • 1/4 cups Tres Estrellas® rice flour
  • 3/4 cups piloncillo, grated
  • 1/2 cups water
  • 2 cups amaranth
  • 2 tablespoons walnuts, chopped
  • 2 tablespoons peanuts, in halves
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons raisins
  • 1 cup evaporated milk
  • amaranth joy, in pieces to decorate

  • Pour the whole milk into a bowl, add the Tres Estrellas® Rice Flour and dissolve with the help of a balloon whisk for approximately 3 minutes. Reservation.
  • In a hot saucepan place the piloncillo, pour the water and stir until diluted. Add the amaranth, walnut, peanut, pumpkin seed and raisins, integrate, cook 3 minutes or until a thick consistency is obtained. Remove from heat.
  • Blend the previous mixture of amaranth together with the evaporated milk. Reservation.
  • Pour the mixture into a deep pot over low heat, add the Tres Estrellas® Rice Flour diluted in milk and stir constantly until integrated; cook for 8 minutes or until the milk boils.
  • In a cup, place some pieces of dulce de joy, serve the hot atole and decorate with more pieces of candy.
