Avocado Stuffed with Crab Surimi

  • 2 avocados
  • 1 cup celery, clean and disinfected
  • 1 cup surimi
  • 1 cup mango, diced
  • 2 tablespoons cilantro, finely chopped
  • 1 cup cucumber, diced
  • salt

  • 1 lemon, juice
  • 2 tablespoons mayonnaise
  • 1 tablespoon chipotle chile in adobo sauce

  • Cut the surimi into small cubes. Set aside.
  • Place the celery, seedless and peeled cucumber in small cubes and the mango pulp in a bowl and mix everything.
  • Incorporate the chopped cilantro, yellow lemon juice, and crab surimi.
  • Season with salt, pepper, and a splash of olive oil.
  • You can add mayonnaise and chipotle chili if you wish.
  • Cut the avocado in half and remove a bit of pulp to fill it with the previous preparation.
  • Remove the skin from the avocado with the help of a large spoon. Fill and serve.
