  • 1/4 onions
  • 2 cloves garlic
  • 4 tomatoes
  • 6 guajillo chiles, rehydrated
  • 2 cascabel chiles
  • 1 morita chile
  • 2 cups chicken broth
  • salt and pepper
  • 1.2 kilos beef round, clean, without fat

  • 1 cup chorizo
  • 1 cup almonds, without skin
  • 1 cup plum, boneless
  • vegetable oil
  • white rice, for accompaniment
  • new potatoes, with butter, for accompaniment

  • Blend the onion, garlic, tomato, guajillo pepper, cascabel pepper, morita pepper, chicken broth, salt, and pepper. Strain and set aside.
  • Season the beef with salt and pepper. Make holes in the meat with a knife, carefully trying to pierce through the beef and repeat until you have 3 holes. If you can't pierce the beef horizontally, then do it vertically.Fill each hole with chorizo, almonds, and prunes.
  • Sear the meat on both sides in a pressure cooker with oil over medium heat. Pour in the sauce, cover, and cook under pressure for 45 minutes.
  • Slice the braised beef, serve, and accompany with white rice and baby potatoes.
