  • 2 cups broccoli
  • 2 cups mashed potato
  • 1 egg
  • 1 cup Manchego cheese
  • salt and pepper
  • 1/2 cups breadcrumbs
  • oil , for frying
  • salad, to accompany

  • Cook the broccoli for 5 minutes in a pot with enough boiling water and salt. Remove from the water, drain, and set aside.
  • Mix the mashed potatoes, egg, cheese, salt, pepper, breadcrumbs, and broccoli. Take portions of the mixture and form the patties.
  • Cook the patties in a pan over medium heat with a little oil for 3 minutes on each side or until golden brown.
  • Serve the broccoli patties and accompany with salad and dressing.
