2 cups mashed potato
1 egg
1 cup Manchego cheese

1/2 cups breadcrumbs

Cook the broccoli for 5 minutes in a pot with enough boiling water and salt. Remove from the water, drain, and set aside.
Mix the mashed potatoes, egg, cheese, salt, pepper, breadcrumbs, and broccoli. Take portions of the mixture and form the patties.
Cook the patties in a pan over medium heat with a little oil for 3 minutes on each side or until golden brown.
Serve the broccoli patties and accompany with salad and dressing.
