200 grams panela cheese
1/4 cups cilantro, finely chopped
1/4 cups onion, finely chopped

Roast the tomatoes, chiles, garlic, and onion on a griddle for 5 minutes or until charred.
Blend the tomatoes, chiles, garlic, onion, cumin, chicken broth, and season with salt. Blend for 5 minutes or until everything is perfectly ground.
Heat a grill and add the panela cheese. Seal on both sides for 2 minutes. Set aside.
Serve on a deep plate, pour the green sauce over it, and add the chopped cilantro and onion. Enjoy with flour tortillas.
