1 cup chorizo
vegetable oil, for frying the noodles
400 grams fideo pasta
3/4 cups tomato purée
1/4 onions, finely chopped
1 clove garlic, finely chopped
3 ground chipotle chiles, in adobo
1 cup chicken broth
sour cream, for garnish
panela cheese, crumbled, for garnish
avocado, fan-shaped, for garnish

Heat the oil in a saucepan over medium heat, add the noodles, chorizo, and fry for 4 minutes, until lightly golden.
Add the tomato puree, onion, garlic, chipotle pepper, and chicken broth. Cover and cook for 10 minutes, until the liquid evaporates.
Stir and season the soup.
Serve on a plate, garnish with cream, cheese, and avocado.
