Try this incredible version of a savory roll that you can enjoy with your favorite fillings. The secret of this ham and cheese roll with pancake flour is that the egg makes it fluffy and soft. This ham roll is perfect for a family breakfast.

Separate the yolks and egg whites of Huevo San Juan® into two different bowls. Set aside.
For the sponge cake, beat the Huevo San Juan® yolks with sugar until doubled in size and set aside; then beat the Huevo San Juan® whites with sugar until doubled in size and combine with the previous mixture. Gradually fold in the sifted flour and add the melted butter.
Spread onto a baking sheet lined with parchment paper, using a spatula to spread the batter. Bake at 180 °C for 10 minutes; remember not to open the oven while the sponge cake is baking.
Remove from the oven, spread a dry cotton cloth with powdered sugar, and flip the sponge cake, remove the parchment paper, and quickly roll the sponge cake wrapping it with the cloth while it is still hot, let it rest rolled up until it cools. This will give the sponge cake flexibility.
In a bowl, place the cream cheese, season with salt, pepper, and oregano to taste; mix with a whisk and spoon until you achieve a creamy consistency. Set aside.
Unroll the sponge cake, using a spatula to cover with the cream cheese mixture; place a layer of ham slices, a layer of cheese slices, and repeat with ham until covered; roll it up again using the cotton cloth. Let it rest for a moment.
Cut the roll into slices with a serrated knife. Garnish with thyme and enjoy.
