  • 6 cups water, warm
  • 2 tablespoons pickling lime
  • 500 grams blue corn
  • salt
  • water, if necessary
  • Oaxaca cheese
  • salsa, martajada

  • In a bowl, mix the water with the lime, dissolve, and let it rest for 5 minutes. Place the water in a pot with the blue corn and cook for 1 hour.Let it rest for 12 hours, drain, and pass through the mill several times until obtaining a homogeneous dough.
  • Place the dough in a bowl and mix with salt and a little water if necessary.
  • Take a bit of the dough and place it in a press. Form the tortilla and cook on a griddle for 2 minutes on each side or until well cooked.
  • Fill the tortillas with Oaxaca cheese and cook for 3 minutes. Serve and accompany with martajada sauce.
