  • Use sushi rice! This rice contains more starch than the rice you have at home and helps to form sushi rolls, cones, or spheres, as it sticks better. Before cooking it, it is recommended to rinse it in cold water at least 3 times, cover it with water, stir with a paddle until the excess starch, impurities, or old rice are removed, as they will float to the surface. You will notice how the water clarifies with each wash. Drain.
  • Place 2 cups of rice with 2 cups of cold water in a pot. It is important to mention that to cook sushi rice, you will always use equal amounts of rice to water, so there is no mistake in the calculation. Now cover and cook over medium-high heat for 11 minutes; it is important not to uncover.
  • After the time is up, lower the heat to minimum and cook for 8 more minutes without uncovering. Now, turn off the heat and let it rest for 2 minutes. Uncover and set aside.
  • Once your sushi rice is ready, mix the rice vinegar with the mirin, sugar, and salt until well combined. Set aside.
  • Place the still warm sushi rice in a large bowl, separate the grains with a wooden paddle, cool the rice gradually, pour in the vinegar mixture and finish integrating. Now just let it cool down.
